Wine Technology:

All the vines are very low yielded, 20% of them up to 6 clusters per vine. The grapes are very well matured; grape tops removed by seizers in beginning of August (at veraison).
Two days of cold and 8 days of classic maceration. The wine is aged for 16 months in Slavonian and French oak barrique barrels (10% of new barrels). Controlled malolactic fermentation and 3 months of active batonaging.


Wine Description:

Modern Bordeaux blend typical for the left bank of the river Gironde with lighter body but rich tannic structure with recognizable aromatic of cabernet Sauvignon. Because of the nice freshness the wine matures in the bottle.
Ruby color with youthful violet hues. Mature aromas of ripe red fruits (bramble, blackcurrant, raspberry, sour cherry), carob, spicy cinnamon notes, vanilla and some smoky notes. Ready to drink now but has a long life, 5 – 10 years.


Food and Wine

Recommended to pair with all kinds of red meat, venison and spicy dishes, in a few years also by itself in special gatherings.


Weather Characteristics of Vintages:

Early spring and budding in March. This is followed by heavy spring frost at the lowest positions in late April. Flowering is completed in May. Optimal conditions for berry development. An alternation of longer sunny and shorter rainy periods follows. A very early onset of ripening is slowed by the longer dry period with extreme temperatures (40 °C) in August. A very long rainy season in September finished by strong burja wind during the last week. Harvesting of early varieties in late August, harvesting of mid-early and late varieties merged into the same term in late September, ending October 1.
